Felipe Machado de Sant'Anna

I am a Doctor of Veterinary Medicine, and had completed an M.Sc. on probiotic microorganisms in Brazilian artisan cheeses and a Ph.D. on cheese microbiomes. I served as an Associate Professor in Brazil, teaching dairy inspection and technology. As an Assistant Professor at UVM since January 2025, my research focuses on food safety and antimicrobial resistance in dairy products and especially cheesemaking environment using genomic approaches. I also contributed to IMA Ordinance No. 2051 (2021), which standardized ripening periods for the Brazilian Minas Artisanal Cheese, balancing traditional practices with market expansion.
